Apple Kheer

Kheer or Payasam is an essential part of every Indian celebration and festival Apple kheer or Seb Ki kheer is a delicious Indian milk based dessert made with apples and dry fruits.
Kheer also known as payasam or payasa is a traditional Indian dessert made by boiling milk, sugar and a main ingredient like rice, vermicelli, semolina or fruits and certain vegetables like carrot, bottle gourd(lauki), etc and flavoured with cardamom. Optionally dry fruits too.

Ingredients
  

  • 2-3 small red apples (sweet apple), peeled and grated
  • 1-2 tbsp tablespoon Ghee
  • 500-700ml Milk (full fat preferable)
  • 5-6 green cardamoms, freshly grounded
  • small handful mix of almonds, grossly cut
  • 3-4 tbsp condensed milk, optional

Garnish

  • few sliced apple
  • 1 Tbsp crushed/ sliced pistachios
  • some dried edible rose buds

Instructions
 

  • Heat 1-2 tablespoons ghee in a small pan over medium flame and add chopped/ grated apple in it
  • Stir and cook until moisture (apple juice part) evaporates. Throw in the almonds and half of the grounded cardamom. Cover it. Let the ingredients soak the flavours and juices.
    Give it few minutes until apple looks dry and almonds emit toasted flava.Cover the lid and let it rest for 2-3 minutes.
  • Pour milk in another pan and bring it to boil over medium flame.When it starts boiling, reduce flame to low and cook until milk reduces to almost ¾ of its original quantity and turns little thick – it will take around 8-10 minutes. Stir in between at regular intervals to prevent sticking. Add condensed milk, if required.
  • Increase flame to medium and stir continuously for 4-5 minutes. Taste the milk for sugar and if required, add more tablespoon condensed milk or sugar (to taste) and mix wel
  • Finally transfer the cooked apple mixture to the milk pan, stir well. Cover it and let it rest for sometime.
  • Serve it warm or cold to preference.
    Garnish with rose petals, apple slices and pistachios.
    Trust me you will land up with never ending queue of guest.

Notes

Choose an apple variety that is sweeter in taste to prepare this kheer. To prevent apple from turning brown, peel and grate it just before starting on first step of the directions.
I have not peeled my apples, it tastes equally good loaded with iron which we get from apple peels.
Dry fruits can be toasted prior in clarified butter for extra flava and taste.
