Collect & prepare all the ingredients.
In a bowl, mix the flour, baking powder, salt and sugar.
Add the eggs, vanilla essence (optional) and milk.
Mix until you have a smooth, thick batter. Let the batter rest for a minimum of 30 minutes. The batter can be left overnight in the fridge. Preheat the waffle iron on a medium heat; add a ladleful of batter to the waffle iron. For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close.
Cook until golden brown.Approx 8-10 minutes on my waffle iron.
Transfer to a wire rack to cool, so the waffles do not go soggy.
