Mango Popsicle

These lightly creamy fruit popsicles are inspired by my childhood favourites ice lollies & matka kulfi. These popsciles share a mid position not too luscious and icy, just the right light slurping creamy texture to relish.

  • Pour the mango yogurt mix into popsicle moulds.
  • Place the popsicles in the freezer until they are fully frozen, minimum 6-7 hours, depends on your refrigerator settings. Please adjust accordingly.

Notes

I normally prefer well ripe mangoes to get the best sweetness and gorgeous color, normally avoid sweeteners.
Sometimes mangoes are not sweet enough, I add in over ripe bananas.
Use a sweetener to your choice in case you need, honey has worked beautifully on some occasions for me.
Banana flavoured or vanilla flavoured yoghurt can also be used, no extra sweetener required.
Vegan option- plant based probiotic yoghurt
When struggling to remove them from the moulds, you can dip the bottom of the mold in lukewarm water for about 10-20 seconds, makes it easier.
