Mint Coriander Chutney

Pudina (mint) Dhania ( coriander )ki Chutney is also called as Hari ( green) Chutney are popular hindi terminologies.
This is a lip smacking wonderful condiment packed with fresh flavours and richness, a perfect tickle to palate and taste buds.
This chutney is probably one of the most favorite Indian accompaniment.
It is great for sandwich spreads, heavens with crispy samosas, pakoras,chaat and list goes endless.
Coriander Leaves are packed with vitamin A, C & K, along with dietary minerals, while mint is loaded with antioxidants and phytonurients that can work wonders for your stomach.

Ingredients
  

  • 2 cup mint leaves chopped
  • 1 cup coriander leaves chopped
  • 12- 15 cashews (optional)
  • 1 inch piece fresh ginger
  • 4-5 green chillies
  • 2-3 tbsp lemon juice
  • 1 tsp cumin seeds
  • 1/2 tsp brown sugar
  • Salt to taste

Instructions
 

  • Combine all the ingredients and blend in a food processor to a smooth paste using enough water.

Notes

Cup measure of 250ml is used
Fresh mint and coriander leaves are essential for best taste and flavour.
Everyone has different taste buds, please be free to adjust the spice levels like the heat by adjusting the quantity of green chillies or tanginess with lemon juice.
I have used cashews to deliver a rich creamy smooth wrap to the chutney.
Whisked yoghurt or Dahi
can also be added to obtain smooth creamy texture.
Fresh chutney delivers best taste, though it can be stored in airtight container in refrigerator for 2-3 days.
