With summer around the corner, grocery stores are flooded with fruits.
I always look forward to this season for fruits, those colors, refreshing juices and the list keeps flowing.
Itโs time for a refreshing summer popsicle recipe, these simple mango yogurt popsicles made with plain probiotics yogurt, ripe mangoes, honey to taste & infused with freshly crushed cardamom are decadent.
These lightly creamy fruit popsicles are inspired by my childhood favourites ice lollies & matka kulfi. These popsciles share a mid position not too luscious and icy, just the right light slurping creamy texture to relish.
I have used probiotic greek yogurt and ripened mangoes for this batch popsicles, but you can also use sweet vanilla yogurt instead โ no need to add additional sugar or sweetener in that case. For a an option with no added sugar or honey, you could add ripe bananas in place of the honey or sugar.
Mango Popsicle
Ingredients
- 3-4 well ripe medium sized mangoes peeled, sliced, cut into pieces
- 1 cup probiotic greek yogurt
- honey to taste as sweetener, optional
- 2-3 green cardamom Freshly crushed, optional
Instructions
- Combine all the ingredients in a blender and mix until you have a smoothie like mix.
- Taste and add additional honey(sweetener) if needed.
- Pour the mango yogurt mix into popsicle moulds.
- Place the popsicles in the freezer until they are fully frozen, minimum 6-7 hours, depends on your refrigerator settings. Please adjust accordingly.
