Tava Mushroom Skewers
Mushrooms are one of my favourite food and they just happen to be absolutely amazing as skewers! These flavoursome mushroom skewers are so easy to put together. The next time you are looking for a side or some tasty appetisers or even a light main you’ll recall these scrumptious mushroom skewers!
Ingredients
- 300 gm mushroom
- 1 bell pepper, cut to bite size
- 1 red onion cut to bite size
- 3 tbsps greek yoghurt
- 3 tbsps balsamic vinegar
- 1 tbsp dried fenugreek leaves
- 1/2 tsp minced garlic or powder
- 1 tsp curry powder
- 1 tsp paprika
- 1/2 tsp crushed peppercorns
- butter or oil spray as required
- drizzle hot pepper sauce to taste
- drizzle sweet pepper sauce to taste
- salt to taste
Instructions
- You just need to throw the mushrooms in a simple balsamic vinegar & garlic marinade for 10 minutes.
- Later 2nd marinade in Greek yoghurt, fenugreek leaves, curry powder, salt, black pepper and paprika to taste. Rest it for 30minutes. I have used button mushrooms you can for any species, cooking time will vary to size & quantity.
- Heat & grease the iron skillet(tawa) well, gradually place & roast the skewers, medium to low heat until brown & charred to your taste. Spray oil as required. I have also drizzled hot pepper & sweet pepper sauce over the skewers just few minutes before these are ready to hop out.
- Soak the bamboo skewers, prior to load. Be a good artist and play your role in stacking it. I have used red sweet onions and yellow bell pepper, you can make your pick. Add veggies to make it wholesome.
Notes
Adjust the spice scale to your taste.
I usually replace paprika with chilli flakes for more heat.
The cooking time and quantity of ingredients would vary to size of mushroom species and it’s quantity.
If you prefer golden brown and charred taste on higher side cooking time would increase.
