Tandoori chicken is a popular Indian chicken starter prepared by roasting chicken marinated in yogurt and spices.Traditionally cooked in a tandoor (cylindrical clay oven), tandoori chicken is usually relished more on the bones.
Enjoy with indian naan bread, mint coriander chutney and yoghurt dip. Do add some crunch as side from fresh salad of red onions, lettuce, cucumber, tomatoes & green lentil sprouts.

Equipment
- Clay Oven(Tandoor), Oven, Grill or Barbeque
Ingredients
- 8 chicken thighs/ legs
- 2 cups probiotic yoghurt
- 1 small red onion, finely chopped
- 1 teaspoon fresh garlic paste
- 1 teaspoon fresh ginger paste
- 2 teaspoon grounded caramelised onion
- 1 teaspoon roasted cumin
- 1 teaspoon black pepper powder
- 1 teaspoon red chilli powder
- 1 teaspoon lightly toasted turmeric powder
- 1 tablespoon garam masala
- 1 teaspoon salt or to taste
- 2 teaspoon toasted coriander powder
- 1 teaspoon orange/red organic food color, optional
- 1 lemon, juiced
- Some cooking oil as needed for spray or coat.
Instructions
- Whisk the yoghurt grossly.Add all spice ingredients to a large bowl and mix well.
- Finally the chicken pieces, stir well for the marinade to coat evenly.
- Cover the bowl with plastic wrap, then let marinade rest in the refrigerator for at least 8 hours.
- Remove the majority of the marinade before cooking the chicken.
Cooking method (Grill)
- Heat the grill to medium-high heat and cook the chicken until cooked through, 10-12 minutes or until well done to your taste. Please flip half way.
Oven
- Around 200, 20-25 minutes one side and then flip it over.
Notes
Please do not add oil to the marinade as blocks the pore on the meat, spray cooking oil both sides just before placing in oven or over grill.
Another useful tip is to cut small slots through the meat for the marinade to seep in, adding taste and flavors.
I prefer Indian yogurt as the bitter taste adds flava. Alternatively classic greek yogurt works well.
For best results would prefer overnight marination.Please adjust the cooking time to your appliance setting.
One can adjust the spice scale to their taste.
