Here I come to scatter my Raita love,this time it’s “Anaar (Pomegranate) Raita paired with Aloo Parwal (Pointed gourd )stir fry”
This was a little midweek feast, prepared for friends who visited us yesterday evening.Time and ingredients were the limiting factors, had no energy after work to hop out for grocery shopping late evening.Oh !! that exclamatory expression when all turns well on the dinner table.
To provide varied texture, have added a mixture of lightly sauté nuts, melon seeds and sultanas. One spoon of this raita showers, succulent bits of Pomo, chewiness of sultanas and aromatic crunch of nuts, all make a wonderful combo.Mint and coriander add a zest with refreshing feel to the raita.
Pomegranate Raita
Ingredients
- 550 gm probiotic yoghurt whisked
- small handful of fresh pomegranate
- 10-12 almonds lightly toasted and coarsely crushed
- 12-15 cashews lightly toasted
- Some sultanas lightly toasted
- 1-2 tsp melon seeds lightly toasted
- 1 1/2 tsp brown sugar
- 1/2 tsp freshly toasted cumin powder
- 1/8 tsp chaat masala
- few strings of mint and coriander finely chopped
- pinch of red chilli powder (optional)
- Black salt to taste
Instructions
- Take yogurt or thick curd in a large mixing bowl and whisk to make it smooth and creamy.
- Season it well with black salt, roasted cumin powder, red chilli powders, chaat masala, brown sugar, chopped mint & coriander.
- I prefer to add toasted nuts, brings out flavours and adds enticing aroma.These are can be just roasted on a warm pan or by adding a blob of clarified butter.
- Stir in nuts, melon seeds and pomegranate. Gently wrap all the ingredients.
- Refrigerate for 15-20minutes, consume fresh for best results.
- Serve as a refreshing accompaniment to any stir fry.

- scatter few fresh pomegranate few halved cashews
