I love to call it “Anda Curry” garnished with melon seeds and curry leaves, it’s a win win bowl for second helping at the dinner table on a busy weekend.
Egg curry is a popular dish made with boiled eggs cooked in the gravy of few spices, ginger, garlic, onions, tomatoes which make it, utterly satisfying and comforting.The recipe tastes best with flatbreads, rice and some crunchy salad.

Masala Egg Curry
Ingredients
- 4 eggs hard boiled, peeled and halved
- 2-3 tbsp sunflower oil, or as needed
- 3 medium onions, puree
- 2 medium tomatoes, puree
- 1 inch ginger, minced
- 2 garlic cloves, minced
- 2 tbsp fresh lemon juice, or adjust to taste
- 1 string fresh curry leaves
- 1 whole dried kashmiri chilli
- 2 tbsp coriander powder
- 1/2 tsp brown mustard seeds
- 1/2 tsp turmeric power
- 1 tsp garam masala
- 1/8 tsp red chilli powder ( optional )
- 1/8 tsp soft brown sugar (optional )
- 1-2 cup water or (adjust to need)
- some melon seeds, lightly roasted
- salt to taste
Garnish
- few curry leaves
- sprinkle toasted melon seeds
Instructions
- Heat a pan, add a blob of oil, lightly toast the melon seeds and keep aside.
- Next add 2tbsp of oil, throw in mustard seeds, and whole dried Kashmiri chilli, let it crackle and cook for few seconds for the spices to release flavour and aroma.
- Add minced ginger garlic and saute until the raw smell goes off.
- Next stir in the onion purée, cook until it begins to leave surface and releases oil, looking for golden color, can take up to 8- 10minutes.
- Then add tomatoes purée and saute well for another 1-2 minutes.
- Now add red chili powder, garam masala, coriander powder, turmeric, sugar and salt.
- Fry everything well until a lovely aroma comes out & the mixture leaves the sides of the pan.
- Pour water just as needed to make a gravy. Cook until the curry thickens to your preference and oil begins to separate.
- Remove from flame, add lime juice to your taste
- Garnish with melon seeds and curry leaves, ready to relish.
