In hindi we would call it Santare ka Raita, which is Orange Raita.
This recipe reminds me of our neighbours back home, who hailed from Nagpur and never missed a season to visit the their home town and what a lovely gesture always gifted us with these succulent mandarins beautiful and delicious fruits, would say one of the best mandarins in the world.
Combined with fresh probiotic yoghurt it is a healthy recipe packed with sweet salty flavour of black salt and brown sugar, sprinkled with dried mint, roasted cumin powder, light wave of heat from grounded red chilli flakes, dressed in creamy yoghurt and succulent mandarins wash off the palate, pippy and saporous.
Above all rich in vitamin C, calcium and antioxidants, absolutely refreshing for hot summer days.
The best part comes when you get to know that it is so quick to make and hardly takes 10 minutes to combine everything and put on table. This chilled Mandarin Raita tastes absolute divine when you serve with the meals.
Mandarin Raita
Ingredients
- 300 gm fresh probiotic yoghurt
- 1 medium orange peeled and sliced, yields 154gm pulp
- 1 teaspoon orange zest
- 1 teaspoon brown sugar
- 1/4 teaspoon black salt
- 1/4 teaspoon fresh roasted cumin powder (jeera powder)
- small pinch table salt (optional)
- generous pinch dried mint leaves (pudina)
- grounded red chilli flakes as per taste (optional)
Instructions
- To begin with making Orange Raita we need to take fresh probiotic yoghurt in a bowl, whisk it till smooth and creamy.
- Keep in refrigerator to chill or chill it prior as per your choice.
- Now peel orange and seperate the segments. Remove the thin skin, and keep the pulp aside.
- Combine whisked and chilled yoghurt with orange pulp, zest and all the remaining ingredients.
- Give a gentle stir and serve immediately.
