Sooji ka halwa, Rava Kesari and Sheera are some Indian terms for “Semolina Pudding”
This Indian semolina pudding is such a quick and easy dish, you really don’t need an occasion to relish it. Just cook it, whenever you want something sweet.This is also a popular prasaadam usually on 8th and 9th day of Navratri festival for Kanjak Puja with pooris and dry chana. Also cooked on festive occasions of Diwali, Ganesh Chaturthi and other religious occasions among Indian families.
Halwas are easy and delicious Indian desserts that have a pudding-like texture. They can be prepared with wide range of ingredients from lentils and veggies to fruits and grains.

I prefer to use coarse version of semolina flour for Halwas, as it imparts a lovely texture to the dessert.
Sooji ka Halwa
Ingredients
- 1 cup rava semolina flour
- 1/2 cup ghee clarified butter
- 1 cup sugar
- 1-1/2 cup water
- 1/8 tsp cardamom powder
- 1-2 tbsp dry fruits sliced pistachios, almond, raisins or grated dry coconut
Instructions
- Boil the water with sugar, add saffron strings and cardamom powder in a pan over low medium heat. Bring to a boil and keep aside.
- Melt the ghee in a frying pan or kadai on medium heat. Add sooji and roast to golden brown color; stirring constantly, this will take about 5 to 8 minutes. Sooji turns golden brown in color and will have a light sweet toasty aroma.
- Add the syrup slowly, as you add the syrup to sooji water will splatter. Turn down the heat to medium low and let it cook for about 2-5 minutes.
- Garnish with raisins, saffron, pistachios or almonds.Serve hot for best taste. For breakfast serve with paratha or aloo puri
