Boondi is small pearls of Chickpea flour which are deep fried in oil till crispy and crunchy. When added in yogurt, these soak up the liquid and becomes soft. Boondi is available in most Asian stores and it comes in variety of flavors like mint, masala, etc.
I prefer to use plain boondi to make Raita and add the masalas in the yogurt. One can choose whichever flavor of boondi you like to make Boondi ka Raita.
You can soak boondi in warm water for 5 minutes to get rid of excess oil before adding it in the yogurt.This will give it a soft and melting texture.
If you prefer crispy crunchy texture, one can add raita boondi directly to the prepared yoghurt batter.
Boondi smells funny when kept for a long time since the oil in it gets spoiled over time. Make sure to check it before adding it in the raita.
