Jaggery, commonly known as Gur in Hindi, is one of the best raw sweeteners that can be easily found in the Indian market.
Gur (jaggery) is a natural product of sugarcane. It is in more unrefined form than sugar. It is a brown raw mass of sucrose which gets it color of light to dark brown because of other elements found in concentration such as wood ash and bagasse. Jaggery is commonly made from two products, that are sugar cane and date palm tree. The process of making gur is easier and more convenient than sugar, and has healthier than consuming refined sugar.Although it has the same calorific value as that of sugar, it is a better substitute for the white refined sugar. It is used in preparing various Indian cuisines and provides them with a distinct flavour.
Gur is mainly for human consumption, and is used in making sweet items. It is also consumed in raw form. Jaggery has hot potency so it is advisable to consume it in winters. It helps in the regulation of body temperature and also detoxifies the body. Basically, Jaggery is 30-40% water, 40-60% sucrose, 15-25% inverted sugar, 0.30% calcium, 8.5-10 mg iron, 05/100 mg phosphorus, 0.10/100 mg, protein and 14/100mg vitamin B.
