MULTIGRAIN BITES
Quick, simple and healthy, perfect nibbles on busy days
Ingredients
2 ripe avocados
Few plum tomatoes, chopped
Some beet root slices
Handful of greens
4-5 multigrain thins/slices
Serves 2-3
Instructions
Peel and mash up the avocados
Layer on multigrain thins
Finish with some crunch (greens, tomatoes and beetroot)

HALLOMI BITES
Ready to slump!! Crusty Hallomi Bites with crunchy pepper and tangy tomatoes,beautiful and healthy appetizers or snacks ready within few minutes.
Ahh!! Look at these miniature salad on toothpick, quick to prepare, full of colors and refreshing. I must confess am not a cheese lover, though I love hallomi cheese so much because of the fact it’s gets cooked up and delivers a relishing crust on the top.
I just want to point out it’s quite salty, so be careful when adding salt to your vinaigrette, as I personally prefer to skip salt in my dressing.
Vinaigrette
2 tbsp extra virgin olive oil
2 tbsp lemon juice
¾ tsp oregano
drizzle some honey
some crushed peppercorns
mix all the above ingredients together
and keep aside.
Bites
200gm hallomi cheese, sliced to desired shapes with moderate thickness, grilled, barbecue or sauté
1 -2 bell peppers, cut similar to cheese bites
Handful plum tomatoes, washed and halved
Instructions
Bath the plum tomatoe halves in the vinaigrette.
Using a toothpick assemble the cooked cheese, pepper and tomato halves
Drizzle any left over dressing over the bites, if you desire.
